She practices in various legal areas, including food and agriculture law, family law, civil litigation, estate planning, and mediation. Rincker Law, PLLC maintains offices in New York City and Champaign, Illinois. Cari is an active member of the Matrimonial Law Committee of the Association of the Bar in the City of New York. Prior to establishing Rincker Law, PLLC, Cari worked as an associate at Budd-Falen Law Offices, LLC in Cheyenne, Wyoming, where her practice encompassed a wide range of legal issues such as agriculture, environment, natural resources, federal lands, wind energy development, crop insurance, property law, commercial law, and probate, serving clients across the western region.

Cari has a strong passion for agriculture stemming from her upbringing. She was raised on a seedstock Simmental cattle farm in Shelbyville, Illinois, where she actively participated in farm work. Cari exhibited cattle through 4-H and FFA at local and national levels and was engaged with the American Junior Simmental Association. She pursued her education at Lake Land College in Mattoon, Illinois, earning an Associate's degree in Agriculture Science and excelling on the college's livestock judging team. Later, she transferred to Texas A & M University, where she obtained a Bachelor's degree in Animal Science and was involved in various agricultural activities, including participation in Livestock and Meat Animal Evaluation judging teams, as well as memberships in Saddle and Sirloin and Texas Aggie Cattlewomen. During her time at Texas A & M University, Cari participated in the Congressional Agriculture and Natural Resource Policy Internship Program, working for Congressman Kevin Brady (R-TX) and gaining her initial exposure to agriculture law and policy. After her time at Texas A & M, Cari returned to her roots to pursue a career in law.
